Double Whammy

It is Women's Day and Holi . Jayshree & I are catching up to celebrate the two together.When I take a hard look at my canvas, I find almost all my friends emancipated, strong & believer in causes. All my women friends, at least!                                                                                                                                                                                                                                                 “Empower Rural Women – End Hunger and Poverty” is the UN International  Women's Day theme for 2012. The more popular one this year, being followed by many, is "Connecting Girls, Inspiring Futures", the theme of the internationalwomensday.com website. Transcending the written document & making the theme work is what we strive to achieve. 
                                                                                                                                                                                 Apar(left) has given me the best Women's Day gift. He has sent across his Roasted Chicken recipe & wants to dedicate this post to his friend he says has inspired him for many things, blogging being one :) Thank you Apar. I am honoured & humbled.

Ingredients: 
1. Chicken Drumsticks (deskinned) -1kg
2. Chat masala- 2 tsp
3. Butter- 2-3 tbsp

For Marination: 
1. Yogurt- 6-7  tsp
2. Ginger Garlic Paste- 2 tsp
3. Turmeric powder - 1/2 tsp
4. Black Pepper Powder- 1 tsp
5. Red Chilli Powder - 1/2 tsp
6. Chicken Masala - 1 1/2 tsp
7. Lemon juice - 2 tsp


Procedure:  
1. Mix all the marination ingredients to make marinade.

2. Coat chicken drumsticks in the marinade and leave for atleast 2 hrs.

3. Preheat oven at 200°C . 

4. Place the drumsticks on the baking dish and set it in the oven for 30 mins .

5. Turn the drumsticks upside down after 30 mins & repeat procedure after 20 mins until golden brown.

6. Glaze drumsticks with melted butter and sprinkle chat masala .

Serve Roasted Chicken with lachha onion or coleslaw salad .
